Hot Pastrami Sandwich

This tastes just like the ones Cynthia used to make.   She apparently had them when she was a girl, in the north, so she had a flavor in mind.   After she was grown and we were married, she experimented until she got the flavor right.   I remember her making them and the only thing different here is simmering the pastrami in beef broth, something I got from the food channel.   Cynthia made them in the oven, I use a small toaster oven.   These sandwiches taste just like her's.

Makes 2 Hot Pastrami Sandwiches
2 Onion Buns - I use Cobblestone Toasted Onion buns from Walmart
4 Slices Swiss Cheese - Great Value Swiss Cheese Slices
10 slices - Hilshire Farms Ultra Thin Sliced Pastrami
4 Tbsp - Land O Lakes Butter w Canola Oil
4 Thin Slices - Sweet Onion
1 Pkg - Swanson's Beef Broth

Place pastrami slices in small sauce pan, cover with beef broth and bring to simmer (not boiling).
Place buns in toaster oven (or oven on cookie sheet) and toast on upside only.  
Generously butter both sides of buns.  
Put 2 slices of swiss cheese on top bun(s)  
Optionally add onion on top of cheese.  
Put 5 slices of pastrami on bottom bun.  
Toast again, upside only, until cheese completely melted.  
Remove bun tops and bottoms from toaster oven (or oven), fold top with cheese over onto bottom.  
Eat um up!
