German Fried Potatoes

We love Jager Schnitzel, and German Fried Potaotes, so....
Also note the Varsteiner Dunkel
Ingredients

3 | Lbs | Potatoes, any kind (we use Irish)
|
1 | Lb | Bacon, maple flavored, cut into 1in squares.
|
2 | Onions | Large, diced
|
1 | bunch | Parsley, chopped
|
| | Salt & Pepper
|
1 | C | Olive Oil, for frying
|
Directions
- Wash potatoes.
- Slice potatoes int 1/8" thick slices.
- Slice bacon into 1" pieces.
- Put olive oil into large deep skillet (cover bottom about 1/2" deep))
- Add potatoes, cut up bacon, diced onions, parsley, salt & pepper to pan.
- Cook on medium heat, stirring and watching so potatoes don't burn, they
will stick to the bottom if you don't.
- Cover pan for 1st 20mins, cookin on low heat.
- Turn up the heat for last 15mins.
