Preheat oven to 325°
In a mixing bowl combine eggs and butter and beat until frothy.
Add sugar and flour and mix.
Add buttermilk, salt, Vanilla, Lemon extract, and minced lemon peel and stir to combine.
Pour into pie crust.
Bake at 325° for 10 minutes and then raise heat to 350° for 50 minutes.
It will rise then settle back down as it cools.
Cool 2 hours before serving.
